What kind of spinach is it and how can you get into it?
Let me take you to food school for a moment:
Red Spinach aka Chinese Spinach derived from Persia and was introduced to Europe and Africa. It's available late winter through spring and available at local farmers markets and some Trader Joe's.
Red Spinach is a good source of vitamin C, A, iron, calcium and folic acid. It helps with digestion, treats anemia, kidney problems, vision, cures poisonous bites, reduces fevers and helps with weight loss. You can eat it raw or cooked and pairs well with spring vegetables, citrus, soy, bacon, ginger, fresh cheeses and berries.
Remember color is flavor, baby. And always, and I mean always invest in what you digest. xxDL
