ITALIAN SCRAMBLED EGGS

Soooo, I had this delicious dream that I was getting my Eat, Pray, Love on in Italy. Sigh.
I'm still in Cali. Anywho! I was wide awake at 4AM and decided to make green eggs no ham or as others call it, Italian Scrambled Eggs.

Recipe below.

Ingredients

2 eggs
1 Tbs milk
Freshly chopped spinach
Freshly chopped basil
Chopped mint
Parmesan cheese, grated
Sea salt + pepper
Grape tomatoes
Olive oil

Directions

Heat a teaspoon of olive oil in a pan. Combine eggs, milk, basil, mint, spinach, cheese and s+p into a bowl. Whisk well. Pour egg mixture into pan, wait 1 minute and scramble til preferred doneness.

Plate. Add a side of tomatoes and drizzle with olive oil. Yummy!

One day soon Italy but for now, this will do.
