Now ya know, I rarely go classic but with the Rossini, hunni there's no other. In case you haven't heard, the Rossini is the sister to the Bellini. Ya know that peachy cocktail made with peaches and prosecco. Well, seeing that I have a few strawberries left over from those divine Mother's Day Strawberry Pastries, we're gonna sip on a classic Rossini, Della's way.

Here's what you'll need:
2 Tablespoons honey
3 strawberries per person/glass
1 (750-milliliter) bottle prosecco or other sparkling wine, chilled
1/2 lemon (squeezed)
Combine strawberries, honey and a squeeze of lemon in a blender or processor. Puree til smooth. Pour in bowl and set aside.
Place 3 tablespoons strawberry mixture over a half filled glass of ice. Top with prosecco. With a spoon fold (do not mix) strain mixture into a flute. Top with more processco and aoila! You've got yourself a tasty cocktail.
